A cozy, creamy, garlicky shrimp bake with spinach and sun-dried tomatoes, perfect for a low-carb or keto lifestyle.

  • 1 pound raw large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 3 cups fresh baby spinach
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon paprika
  • ½ teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper, to taste
  • ¾ cup heavy cream
  • ¼ cup cream cheese
  • ⅓ cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat oven to 400°F and lightly oil a medium baking dish with olive oil.
  2. If using frozen shrimp, thaw completely and pat dry; otherwise pat fresh peeled and deveined shrimp dry.
  3. Grate Parmesan and shred mozzarella if not pre-shredded.
  4. Soften cream cheese to room temperature.
  5. Heat 2 tablespoons olive oil in a skillet over medium heat and sauté minced garlic about 1 minute until fragrant.
  6. Add cherry tomatoes and baby spinach to skillet; cook until spinach wilts.
  7. Stir in heavy cream, cream cheese, grated Parmesan, dried Italian seasoning, paprika, and crushed red pepper flakes until sauce is creamy and slightly thickened.
  8. Arrange shrimp in a single layer in prepared baking dish and season with salt and black pepper.
  9. Pour creamy sauce over shrimp and gently toss or spread to coat evenly.
  10. Sprinkle shredded mozzarella cheese on top.
  11. Bake uncovered for 12 to 15 minutes until shrimp turn pink and cheese is bubbly and golden.
  12. Sprinkle chopped fresh parsley over the bake and serve immediately.
