  • 5 slices Bacon, cooked and crumbled
  • 1/2 cup Sour Cream
  • 1/4 cup Chopped Fresh Jalapeno (for dressing)
  • 1/4 cup Fresh Cilantro
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Salt
  • Juice of 2 Limes

Instructions

  1. Cook chicken breast by baking, boiling, or grilling until cooked through.
  2. Shred the cooked chicken and chop into small, bite-sized pieces; set aside to cool.
  3. Cook bacon until crispy, drain on paper towels, then crumble.
  4. Dice celery, slice green onions, and finely chop fresh jalapeños.
  5. In a large bowl, combine shredded chicken, diced celery, sliced green onions, chopped jalapeños, crumbled bacon, cottage cheese, and shredded cheddar; stir to combine.
  6. Place all dressing ingredients (sour cream, chopped jalapeño, cilantro, onion powder, garlic salt, lime juice) in a blender or food processor and blend until smooth and creamy.
  7. Pour the cilantro-lime jalapeño dressing over the salad and toss gently to coat.
