  • 1 tablespoon baking powder

  • 4 ounces cream cheese, cold and cubed
  • 2/3 cup fresh strawberries, chopped
  • 2/3 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 egg, lightly beaten (for brushing the tops)
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Add cold butter and cream cheese cubes to the dry ingredients. Cut them in with a pastry cutter or fingers until mixture resembles coarse crumbs.
  4. Gently fold in chopped strawberries without mashing them.
  5. In a small bowl, stir together heavy cream and vanilla extract. Pour slowly into dry ingredients and gently mix until dough just comes together; avoid overmixing.
  6. Turn dough onto a lightly floured surface. Pat or roll into a 1-inch thick rectangle.
  7. Cut dough into triangles or rounds, as preferred.
  8. Place scones on prepared baking sheet with space to rise.
  9. Brush tops lightly with beaten egg for a golden shine.
  10. Bake for 18-22 minutes until tops are golden brown and a toothpick inserted comes out clean.
  11. Transfer to a wire rack to cool slightly before serving.
  12. Optional: Dust with powdered sugar before serving.
