  • 1 pound (450g) breakfast sausage
  • 1 pre-made pizza crust or 1 ball of homemade dough
  • 1 tablespoon olive oil
  • 6 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup chopped green onions (optional)
  • 1/2 cup diced bell peppers (optional)

Instructions

  1. Preheat oven to 220°C (425°F). Roll out homemade dough on a floured surface into desired shape, or use pre-made crust. Place dough on a pizza stone or baking sheet lined with parchment paper.
  2. Cook sausage in a large skillet over medium heat until browned and cooked through. Drain excess fat and set aside.
  3. In a bowl, whisk eggs, milk, salt, and pepper. Pour into a nonstick pan and cook over low heat, gently stirring until eggs are soft and slightly runny; they will finish cooking in the oven.
  4. Brush pizza dough with olive oil. Evenly spread cooked sausage over the dough, then gently spoon scrambled eggs on top. Sprinkle shredded cheddar and mozzarella cheeses, then add optional green onions and bell peppers.
  5. Bake pizza in the preheated oven for 12-15 minutes, until cheese is melted, bubbly, golden and crust is crisp and browned.
  6. Remove pizza from oven and let cool for 2-3 minutes to set toppings. Cut into slices and serve.
