A no-bake, fun, and fruity Popping Candy Chocolate Bark combining creamy white chocolate, freeze-dried strawberries, colorful sprinkles, and popping candy for a fizzy, crunchy treat.

  • 10 ounces white chocolate chips or chopped white chocolate
  • 1/3 cup popping candy (Pop Rocks)
  • 2 tablespoons crushed freeze-dried strawberries
  • 2 tablespoons colorful sprinkles (rainbow or choice)

Instructions

  1. Line a baking sheet with parchment paper, set aside.
  2. Place about 3/4 of the white chocolate (7.5 ounces) in a microwave-safe bowl.
  3. Heat the chocolate in 15-30 second bursts, stirring well between each, until mostly melted but with some chunks remaining.
  4. Add the remaining white chocolate (2.5 ounces) to the warm bowl, stirring gently until melted and glossy.
  5. If needed, microwave an additional 5-10 seconds to achieve smooth consistency.
  6. Gently fold in the popping candy, spreading it evenly without crushing it to keep the fizz alive.
  7. Pour the chocolate mixture onto the prepared baking sheet and spread evenly to about 1/4 inch thickness.
  8. Sprinkle the crushed freeze-dried strawberries and colorful sprinkles evenly over the top.
  9. Chill in the freezer for 15 minutes for quick setting or in the refrigerator/cool shaded area for 2 to 4 hours until firm and not sticky.
  10. Once set, break the bark into bite-sized pieces and serve.
