  • 1 large egg
  • 1 teaspoon lemon zest (divided)
  • 1 large ripe pear (ripe, but not mushy)
  • 2 tablespoons turbinado sugar
  • 3 sprigs fresh thyme

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Beat the softened butter and granulated sugar in a large bowl with an electric mixer until pale and fluffy, about 3-4 minutes.
  3. Add kosher salt, almond flour, all-purpose flour, and egg to the bowl. Mix gently until combined; do not overmix.
  4. Grate half a teaspoon of lemon zest into the mixture and fold it through with a spatula.
  5. Divide the frangipane evenly between two 8-ounce ramekins (heart-shaped or deep crème brûlée dishes). Smooth the tops with a spatula.
  6. Core and slice the ripe pear, then arrange the pear slices evenly over the frangipane in each ramekin.
  7. In a small bowl, mix turbinado sugar, remaining lemon zest, and leaves from the thyme sprigs to create the toasted lemon thyme sugar.
  8. Sprinkle the lemon thyme sugar evenly over the pear slices.
  9. Bake in the preheated oven for approximately 25-30 minutes, or until the frangipane is set and the pears are tender and jammy.
  10. Remove from oven and let cool slightly before serving.
