  • 1 cup quinoa (rinsed)
  • 2 cups chicken broth
  • 1/4 cup fresh parsley (chopped)
  • Optional: 1/4 teaspoon red pepper flakes (for heat)
  • Optional: 1 cup cherry tomatoes (halved)
  • Optional: 2 cups spinach or kale (tossed near the end)

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper. Coat the chicken breasts in this mixture and let sit for 10 minutes to marinate.
  2. Heat a large skillet over medium heat. Add the chicken and cook for 5 to 6 minutes per side until golden and juices run clear.
  3. Add the rinsed quinoa to the skillet and stir for 2 minutes until lightly toasted and fragrant with a golden color.
  4. Pour in the chicken broth, stir gently, bring to a boil, then cover and reduce heat to low. Let simmer for 15 minutes until quinoa is fluffy and broth is absorbed.
  5. Place the cooked chicken back on top of the quinoa, cover, and let rest for 5 minutes to allow flavors to meld.
  6. Serve the dish garnished with chopped fresh parsley, halved cherry tomatoes, and a pinch of red pepper flakes if desired. Serve warm.

Notes

For an extra fresh zing, add a squeeze of fresh lemon juice right before serving to brighten the flavors.
