A cozy, sweet Date Nut Bread loaded with chopped dates and nuts, perfect for breakfast or a snack, moist and tender with simple baking steps.

  • 1 cup boiling water
  • 1 teaspoon baking soda
  • 2 tablespoons butter, softened
  • 1/2 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts or pecans

Instructions

  1. Put the chopped dates into a bowl and pour boiling water over them.
  2. Sprinkle in the baking soda and stir gently; set aside for 10 minutes to soften.
  3. In a large bowl, cream together softened butter and sugar until smooth and fluffy.
  4. Add the egg and vanilla extract; mix until well combined.
  5. Add flour, baking powder, and salt to the wet ingredients and mix gently until no dry flour is visible; avoid overmixing.
  6. Fold in the softened date mixture and chopped nuts until evenly distributed.
  7. Pour batter into a lightly greased loaf pan and smooth the top.
  8. Bake in a preheated oven at 175°C (350°F) for 50 to 60 minutes until a toothpick inserted in the center comes out clean or with a few crumbs.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack and cool completely before slicing.
