Instructions

  1. Cook the sausage in a skillet over medium heat until browned and crisp. Drain excess grease by placing sausage on paper towels and set aside.
  2. In the same skillet, add chopped onions and bell peppers. Cook for 3 to 5 minutes until soft and caramelized. Set aside.
  3. Crack eggs into a bowl, whisk with salt and pepper. Melt butter in the skillet, pour in eggs and scramble gently until soft and fluffy. Do not overcook.
  4. Warm a tortilla flat on a clean surface. Place scrambled eggs in the center, add cooked sausage or bacon, then sautéed veggies, sprinkle with shredded cheese, and top with cooked potatoes or hash browns.
  5. Fold the sides of the tortilla in and roll tightly from the bottom to enclose the filling.
  6. Optionally, toast the assembled burrito in a clean skillet for 1 to 2 minutes per side until golden and crunchy.
  7. Slice burrito in half if desired and serve warm with optional toppings like salsa, sour cream, avocado, or hot sauce.
