A soft and savory quick bread combining sweet apples and sharp cheddar cheese, perfect for breakfast, snacks, or dessert.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon (optional)
  • 1/2 cup unsalted butter, melted
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup peeled and chopped apples (about 12 medium apples)
  • 1 cup sharp cheddar cheese, shredded
  • 1/4 cup milk

Instructions

  1. Preheat your oven to 175°C (350°F) and grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon (if using).
  3. In a large bowl, blend melted butter with brown sugar until smooth. Add in eggs and vanilla extract and whisk well.
  4. Gradually add dry ingredients into the wet mixture, stirring gently to combine.
  5. Pour in the milk last and mix to form a smooth batter.
  6. Gently fold in the chopped apples and shredded cheddar cheese, distributing evenly.
  7. Pour batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake for 50-60 minutes until a toothpick inserted in the center comes out clean.
  9. Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

Avoid overmixing the batter to keep the bread tender and prevent it from becoming dense or tough., For a golden cheesy crust, sprinkle extra shredded cheddar cheese on top before baking., Grease your loaf pan well or line with parchment paper for easy removal., Allow the bread to cool fully before slicing to prevent crumbling., Firm apple varieties like Granny Smith or Honeycrisp work best to maintain texture., Grate your own cheddar cheese for better melting and flavor., Try swapping half of the all-purpose flour with whole wheat flour for a heartier bread.
