  • 1 tablespoon baking powder
  • 1 cup shredded mozzarella cheese (optional, adds texture)
  • 2 tablespoons cream cheese
  • 2 large eggs
  • 1 tablespoon honey (optional, for sweetness)
  • Pinch of salt
  • Toppings such as sesame seeds or everything bagel seasoning (optional)

Instructions

  1. Preheat oven to 190°C (375°F) and line a baking sheet with parchment paper.
  2. In a microwave-safe bowl, combine shredded mozzarella and cream cheese. Microwave for 1 minute, stir, then microwave an additional 20-30 seconds until smooth and stretchy.
  3. In a separate bowl, whisk almond flour, baking powder, and salt to evenly distribute baking powder.
  4. Add melted cheese mixture and eggs to dry ingredients. Mix with a spoon or damp/greased hands until smooth, sticky, and well combined.
  5. Divide dough into 4-6 equal parts. Roll each into a ball, then poke a hole in the center and gently stretch to form bagel shape, ensuring the hole is wide enough to not close while baking.
  6. Place shaped bagels on prepared baking sheet. If adding toppings, lightly brush tops with water or egg yolk to help toppings adhere, then sprinkle desired toppings.
  7. Bake for 15-18 minutes until golden brown. Let cool for a few minutes to firm up before slicing.
  8. Serve warm or toasted with desired spreads or toppings.
