Quick and easy cottage cheese pizza bites that are a protein-packed snack kids love, ready in about 30 minutes with just four main ingredients.

  • 1 cup shredded mozzarella cheese (packed)
  • 1/2 cup no sugar added pizza sauce
  • 1/2 teaspoon Italian seasoning

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Pack shredded mozzarella tightly into a measuring cup.
  3. Rub the Italian seasoning between your fingers to release the aroma.
  4. In a medium bowl, combine the cottage cheese, packed shredded mozzarella, pizza sauce, and rubbed Italian seasoning; stir until evenly mixed.
  5. If the mixture feels too wet, add a little more shredded mozzarella and stir to thicken.
  6. Use a tablespoon or small cookie scoop to drop mounds of the mixture onto the prepared baking sheet, spacing about 1 inch apart.
  7. Gently press each mound with the back of a spoon to flatten into mini pizza coins.
  8. Bake at 375°F (190°C) for 15-20 minutes, checking around 15 minutes, until the cheese is bubbly and edges are lightly golden.
  9. Let the bites rest for 2–3 minutes before eating.
